Any ideas?

The easiest would be to unpledge delegates on the first round. The withdrawing candidate would still have to pick his delegates, though - if he's too lazy or frustrated to do even that, tough luck, and deservedly so for voting for someone who sucks that badly.

How do they do it IRL?
IRL delegate slates are written up before the vote.

But who chooses the Uncommitted slate?
Some people gang up and say they want to stand as delegate candidates, and they aren't committed to any of the presidential contenders. Presumably.

Yes. You didn't vote for Al. Just because he's not campaigning and has no running mate is no reason not to support him!
