Why is this the only conflict in which you’re not allowed to identify one side by their nationality? No one says ‘Likud is razing Gaza’ or ‘United Russia attacked Ukraine’. No one would bat an eyelid at a statement ‘the Israelis are in the wrong’ but for Palestine  we always have to refer to the political party  currently in control?

Because per international law and recognition, Hamas is not the government of Palestine or even Gaza. Hamas effectively seized Gaza from the Palestinian Authority.

On a related note, why is the Israeli military always referred to as the "IDF"? Nobody refers to the American military as the "ADF", the British military as the "BDF", the French military as the "FDF", etc.

Because that's the acronym for their official name (Israeli Defense Forces)

The entire name of the US military is the "United States Armed Forces", abbreviated to USAF which I've seen before but not common, possibly because just the Air Force has the same abbreviation. The UK is the British Armed Forces and France is the French Armed Forces. Most countries use that format, but Israel is an exception.

Another notable exception is Japan, which is has the "Japan Self-Defense Forces".
