Remember the GOP Convention starts August 27 and the Olympics run through August 12.

I'm guessing August 14. One full day between the end of the Olympics and the start of the rest of the election season.

I voted August 16, because the nominee usually tries to build suspense for a few days leading up to the announcement.  And Romney would probably wait until the end of the Olympics to start in on that, so a few days after the Olympics.  August 20 or 21 is also possible.  That gives him a full week of veep rollout coverage, which leads right into the RNC.

I'm going to say 20 August 2012 as it's a Monday and will provide a full week of suspense building, but the pick won't get lost over the weekend when everybody takes a deep breath.
